Here is a yummy, and quick recipe for an amazing, and true old fashioned cake made from scratch. Magnificent, sweet batter with crushed pineapple, and pecans topped with a delicate cream cheese frosting. I’ve tried many recipe variations for this classic old fashioned cake, but this is one of my favorite ones. I love anything with cream cheese frosting, but for this particular cake, I would highlight that the combination of toasted pecans, and the pineapple takes this cake to a whole different level of amazing. It is certainly a great addition to any special meal!

Moist and Yummy Pecan and Pineapple cake with a delish Cream Cheese frosting.
Bizcocho de Nueces y PiƱa una deliciosa y jugosa textura con un toque de crema de queso.
First things first, melt butter in a medium skillet over medium heat.
Add pecans, and stir until they are coated with butter.Sprinkle them with a little bit of seal salt.
Shake the pan a couple of times to get the pecans spread out in a single layer.
Mix the eggs ,and the pineapple. You can either do this by hand , with a KitchenAid or regular blender, but if you are going to use a Thermomix, program your Thermomix: **TMX: Time: 30 Seconds/Speed 5
Add the flour, and the baking soda, and blend it all together.
** For Thermomix users: TMX:Time 45 Seconds/Speed 4
Fold in pecans
Pour batter into a 9x13 greased baking dish
Bake at 350F for 30-35 minutes till toothpick inserted in center comes out clean.
**COOL COMPLETELY
With the help of your KitchenAid or regular blender, mix all frosting ingredients together.
For TMX users:Time 20 Seconds/Speed 4
Spread the frosting on top of the cake
Cut the cake into any size you like.
