Here is another wonderful option to eat it as a main dish or a side. It can be prepared in under 10 minutes. It’s eaten plain, as a side dish , combined with spices, nuts, and even with fruit. Here is one of my favorite Couscous recipes!

Ingredients:
 2 tbsp Olive oil
 2 Garlic cloves (Minced)
 ½ tsp Turmeric
 1 ⅔ cups Water
 Lime zest
 ½ tsp Coarse Salt
 1 ½ cups Couscous (Plain)
 ¼ cup Chopped fresh cilantro
 The juice of a lime

In a medium sauce pan, heat oil
Add garlic, and turmeric
Stir for a few minutes, and add water, the lime zest, and the salt-Bring to boil.
Remove from hot, and add couscous. Cover, let it stand for 5 minutes.***Important, DO NOT strip couscous during this five minute period.
Add lime juice, and the fresh cilantro, and mix carefully with a fork. Taste, and add salt if needed.
