Here is a true Andalusian delicacy. It is usually served in bars or restaurants as a tapa.This is not your everyday potato salad, this is something else….give it a try, and you’ll understand why. Also make sure that you use a good quality olive oil ,and vinegar when making this wonderful tapa -Enjoy!

Andalusian Potatoes

 6 Green onions (finely diced)
 5 Medium size potatoes (peeled and sliced 1/2 inch tick
 4 Hard boiled eggs
 1 tbsp Coarse salt
 ½ cup Extra-virgin Olive Oil
 4 tbsp Sherry vinegar
 Fresh Parsley (Chopped)

Wash the potatoes, put them in a medium size pot and cover them with water.Bring to boil, and add salt. Cook for 20-25 minutes or until the potatoes are done inside.
Remove the potatoes, and use the same water to boil the eggs (about 15 minutes)
Peel the potatoes while they are still hot, and chop/slice them up.
Add the potatoes to a large mixing bowl.
Add the chopped boiled eggs, and the rest of ingredients
Stir everything for a minute, and add the fresh parsley.
Taste the potatoes salad, and add more vinegar, salt or oil if necessary.
