Amazing Chocolate Chip Pancakes
In a mixing bowl, beat the egg whites with an electric mixer until stiff peaks form and set aside.
***For Thermomix users: I did this process with Thermomix, please find times and speed below:
Place the egg whites in the TM bowl, and add one pinch of salt.Insert the whisk in the bowl, and set: Thermomix: 3Minutes/Speed 4 (Make sure you gradually set the speed)
In another mixing bowl, whisk together flour, sugar, baking powder, and salt.
In the bowl of an electric mixer, mix together the egg yolks, milk, melted butter, vainilla, and almond extract.
Add the flour mixture.
*** Note: For Thermomix users, I used TM for this process: mix together the egg yolks, milk, melted butter, vainilla, and almond extract.Thermomix: 10Seconds/Speed 4. Add the flour mixture-Thermomix: 10seconds/Speed4
Pour the batter in a mixing bowl, and gently fold the beaten egg whites into the batter. Note: The egg whites shouldn't be fully incorporated.
Add the chocolate chips, and gently fold to combine.
Heat a griddle, and add 1 tablespoon of butter, when butter has melted, pour three tablespoons batter (per pancake), onto the griddle. Flip once bubbles appear, and sides are lightly golden brown.
