Today I’m celebrating the publication of “my first Tapa” in my blog, and I’m so excited,  I love the cooking/publishing part of this blogging idea. For the past few months, I have been learning the technical aspect of building a blog, watching a ton of tutorials, reading books, listening to podcasts on blogging, and while I have been making slow, but steady progress, I also have to admit that it hasn’t been an easy journey-Every single aspect of this blog adventure has been learnt the hard way. Im confident that some day in the near future, I will be clicking on that scary ” go Live” button.

Going back to the publication of “my first tapa”, this is one of my favorite ones, the World-famous Spanish Ensaladilla which is also known as “Russian Potato Salad”…go figure that one. I’m glad I started this “Tapa Category” with such of iconic tapa, and this is just the beginning, I can assure you that in the near future, you’ll find a ton of tapa recipes in my blog….After all , Spaniards are responsible for the introduction of the tapa concept into our wonderful World’s cuisine.

As a Spaniard, I love tapas. One of my favorite things to do when I go back to Spain to visit my family is “ir de Tapeo”. For those not familiar with that term, “Ir de Tapeo” consists of going from bar to bar eating tapas , and drinking wine while having a ton of fun…..and of course, you have to do that with the best company, your friends or your family or even a combination of both- That is a VERY SPANISH thing to do!

Going for tapas with friends or family goes beyond eating, and drinking. There is a real ritual behind the obvious. In my opinion the magic behind the “Ir de Tapeo” concept resides in the group of people you go with. The conversations that take place while gathering around a table full of tapas, the loud noises of the group talking or laughing that could very well scare the sensitive ears of any tourists-Spaniards are loud, and passionate for everything that they do-, and the atmosphere of the small local bars…..those bar’s owners that generation after generation have perpetuated the tradition of eating the same tapas year after year. That is what makes  of”Ir de Tapeo”  an amazing, and magic ritual, and one of the things I miss the most from my beautiful country of birth! That is what life is all about!

Tapa de Ensaladilla Rusa

Ingredients
 600 g Potato (1-2 cm diced)
 34 Carrots
 1 Can of Tuna (5 OZ- or 142 grams)
 1 Imitation Crab meat (1 Package)
 300 g Mayonnaise
 6 Green onions (Chopped)
 Salt
 600 g Water (Measured in grams for Thermomix purposes)

This is a very delicious, and quite easy recipe. I personally use my Thermomix kitchen robot to steam the potatoes, and carrots, but that is a personal choice-I love steam vegetables. You can also boil them in a large sauce pan for 10-15 minutes or until tender. This particular step is entirely up to you.

Cut the potatoes, and carrots in small cubes.
Place the water in the Thermomix bowl.
Add the Thermomix internal steam basket with eggs inside
Place the Thermomix lid, and remove the measuring cup.
Place the Varoma baskets with the potatoes, and carrots on top of the lid.
Cover the Varoma dish and steam***15MIN/VAROMA/Speed 2
Remove the Varoma basket, and take out the internal steam basket with the eggs in it.
Place the Varoma on top of the lid, and continue steaming the potatoes and carrots ***5MIN/VAROMA/Speed 2

While the potatoes are cooking, peel the eggs, and discard shells. Cut the eggs into quarters, and add them to the serving bowl.
Once the potatoes are cooked place them in the serving bowl with the eggs.
Add the crab meat, the shopped green onions, and tuna.
Add the mayonnaise ,and mix well. Don't forget to add salt.

In my opinion, this salad needs at least a couple of hours in the fridge to cool before serving, but I know a lot of people that prefers to eat it while it is still warm.
