Start by heating the oven to 350 Fahrenheit or 180 degrees Celsius.
Spray the loaf pan with non-stick baking spray
With the help of a blender, combine eggs, sugar, greek yogurt, oil, vanilla extract, lemon zest, and lemon juice- If you are using a Thermomix cooking Robot, program your Thermomix: Time: 45 Seconds/Speed 4
Stir in flour, baking powder, and salt-Stir until well combined. If you are using your Thermomix, program your Thermomix: Time:40 Seconds/Speed 5
Pour batter into greased loaf pan, and bake for 50 minutes
Allow the lemon loaf to cook completly before pouring the glaze.
In a medium bowl, mix a cup of powdered sugar with 2-3 tablespoons of lemon juice.
Whisk until sugar and lemon juice are fully incorporated and desired consistency is achieved.
